Gluten Free Pantry Muffin and Scone Mix

My daughter was recently invited to a birthday party at a cooking school for kids.  On the menu was chicken salad (which was gluten-free and dairy-free) and chocolate chip scones (which were not).  So, we decided to make our own before the party so that she could bring one and have it with the other kids.  The problem was that I have never made scones before, much less gluten-free and dairy-free ones.

Luckily, I found Gluten Free Pantry’s Muffin and Scone Mix at my local grocery store.  The recipe on the box seemed fairly straightforward, so we decided to give it a try.

My daughter and I donned our aprons and started mixing.  We had to make a couple of substitutions for the dairy ingredients.  Instead of unsalted butter, we used part Earth Balance margarine and part shortening.  Instead of buttermilk, we used equal parts orange juice mixed with almond milk.  I’ve also seen a recommendation to use rice milk mixed with soy yogurt.

The results?  Pretty darn tasty!  They were a bit crumbly, but that may be due to the substitutions we made.  The flavor, however, was very good.  We also drizzled some icing over them to make them fancy.

So if you have a craving for scones, I would recommend trying this mix.  I don’t think you will be disappointed.
